Happy Herbivore Lasagna Rolls

It had been a while since I made anything from the Happy Herbivore Cookbook and, I must say, I was quite overdue for a delicious HH recipe!  I was planning on making a lasagna recipe that I’d found on Pinterest yesterday evening, but decided to flip through my HH Cookbook before heading to the store and found this Lasagna Rolls Recipe!  I had never even noticed it in there before (probably because there was no picture next to it).  ;-)  

So, I was a little apprehensive about making a vegan lasagna.  I’ve never made a lasagna of any form before.  Also, in case you haven’t noticed, I’m always nervous about making any plant-based dish that is heavily dependent on a cheese substitute.  In all honesty, I wasn’t terribly happy with the stuffed shells I made with Tofutti Better Than Ricotta Cheese, even though my sweetie absolutely loved them.  This was my first time making my own tofu ricotta cheese, so I had no idea how it would turn out.

Well I’ll tell you how it turned out - FABULOUS!  I was very impressed.  I love the Tofutti brand and all, but I will never again buy store bought vegan ricotta “cheese.”  This stuff was excellent!  It was also a very easy dish.  That’s what I love about the Happy Herbivore recipes; they’re usually easy and always delicious!
